Stacey, owner and pastry chef with over 15 years of experience in the industry, has a passion for combining various cuisines with her southern upbringing to create unique and comforting dishes. Inspired by her family's recipe of southern-style buttermilk biscuits, her creations are a perfect blend of tradition and imagination.

Chez Maggy

When Chef Ludo Lefebvre flew over The Rockies and threw on a pair of boots & his cowboy hat, he knew he’d found his second home. Denver, perhaps the greatest city of the West, is defined by possibility: a vast space for exploration & inspiration. Here, Chef Ludo chose to create a new kind of restaurant, one that is truly Mile-High, yet unapologetically French.

Chez Maggy is a traditional French brasserie, reinvented for the Queen City. It’s a love-letter to Margaret, Ludo’s mother-in-law who lived life to help others right here in Colorado. It’s also a celebration of the land of Ludo’s childhood: Burgundy, a place steeped in natural beauty and a deep connection to the Earth. Chez Maggy pays homage to Ludo’s French roots while synthesizing his rich culinary traditions with the naturally-abundant ingredients of the Mountain West. At Chez Maggy, we reimagine Continental Cuisine at the Continental Divide.

Beholden to nothing and open to spontaneity, Chef Ludo utilizes his training by the French Masters to create a menu that honors tradition and delights the senses. Deliciously French, but not a bit pretentious, the menu sings in a dining room that sets a Mile-High standard for elegance & ease. Chez Maggy is all that & a pair of boots. The limit to our creativity? Some might say it’s a mile high.

Coffee Sarap

You may be thinking, how does coffee play into cultural identity? On average, Americans drink about 3 cups of coffee a day. Coffee is a universally shared item and with places like Starbucks, also a shared experience. To bridge the gap between cultures, we felt that an everyday, lovable item like coffee, was a great place to start. Our goal is to have people of all backgrounds connect through the flavors of our heritage and also have the community be exposed to the diversity of Filipino people. We hope to start these conversations through sharing a cup of coffee.

Del Frisco’s Grille

Modern, inviting, stylish and fun, Del Frisco's Grille in Cherry Creek takes the classic bar and grill to new heights, drawing inspiration from bold flavors and market-fresh ingredients. The energetic bar creates a buzz throughout the restaurant and sets the stage for an amazing night out. The patio provides al fresco dining at one of the best restaurants in Cherry Creek.* It'll be your place to catch up and make memories with friends old and new.

Denver Biscuit Co.

In our house, everything is made in house. The biscuits, the gravy, the jam. Heck, even the pickles and local honey butter are homemade. Turns out, the more you make things from scratch, the more generous the portions get. Maybe it’s a Southern thing. Maybe it’s a Denver thing. Maybe it’s a biscuits-the-size-of-basketballs thing. But one thing’s for sure: you’re gonna wanna grab at least 4 napkins. .

Pablito’s Burritos

Pablito's Burritos was born out of a passion to offer the best breakfast burritos to the west side of town, where demand was rapidly rising. Owners Jeff Progar and Marvin Williams saw a brilliant opportunity to expand by leveraging the resources of their existing restaurant, Abrusci’s Fire & Vine, during off-peak hours. With the restaurant underutilized in the mornings, assembling offsite burritos for a grab-and-go breakfast option perfectly catered to early risers.

Jeff and Marvin tirelessly experimented with recipes for months, refining their offerings until they had perfected four amazing burrito varieties. Meanwhile, they meticulously planned costs, streamlined the workload, and coordinated with the staff at Fire & Vine to seamlessly integrate this new venture. The final catalyst was the pandemic. When COVID-19 hit, the grab-and-go, quick-prep model became a hit, and in March 2020, Pablito’s Burritos officially launched.

The rest is history.

Queen City Collective Coffee

In many ways, Queen City started in the mid-2000s while we worked, researched, and played in rural Africa. From Zimbabwe to Rwanda, we spent nearly a decade coordinating humanitarian programs, organizing research projects, and kicking around on humble soccer fields with friends. We learned about community in Africa — real, honest community. Life eventually brought us back to our roots, back to Colorado and the great city of Denver. Along the way, we indulged our passion for coffee by moonlighting as baristas and roasters, and this made our next project an easy progression — we love our farmer friends + we love our city, the Queen City of the Plains + we love coffee — so we started a company that combines all these things!

Collective coffee means we’re doing this together — we have real, tangible connection with our coffee farmers; we know the conditions of their production; we then small-batch roast their coffee in the city we love and we proudly serve it in Denver’s historic Baker neighborhood. We believe everyone is welcome to this ragtag group because good coffee should build the collective good.
